Before I share the recipe, let me say that I'm new to cooking and prefer not to spend a lot of time on complicated dishes. However, I enjoy experimenting with food and wanted to share my mushroom creation with you!

The pizza omelet: This was the very first time for me to try mushrooms out. I had to play safe, I chose the ingredients that are most likely to be there in my freezer. The things that you'll need are-

  • Eggs
  • Mushrooms
  • Butter/oil
  • Onions
  • Bell pepper (optional)
  • Salt and pepper

Clean the mushrooms thoroughly and slice them thinly. Heat oil in a pan and fry the onions until they turn light brown. Add the mushrooms and cook on medium heat for 3-4 minutes. You can also add bell pepper slices, but don't overcook it or it will lose its color. Set this pan aside.

For the egg portion, use a small frying pan with a small base to achieve an optimal thickness when pouring in the beaten egg mixture. Heat up the pan first, then add a small block of butter (or any other oil) and let it melt for about 1 minute before adding in the beaten egg mixture.

Cover with a lid and keep cooking on medium heat until halfway cooked (2-3 minutes). Then gently place all ingredients on top of it, followed by salt and pepper.

Carefully flip everything upside down once veggies are set inside the egg mixture. Cook for another 2 minutes before serving!

Veggies party:

This is just stir-fried vegetables. I don't think mushrooms go well with everything, but this combination turned out to be good. You can improvise with your choice of vegetables. Here's what you'll need:

  • Broccoli
  • Mushrooms
  • Baby corn
  • Salt and pepper
  • Oregano
  • Chilly flakes

Firstly, fry the baby corns. Once they are half fried, add the mushrooms and continue frying until they are half cooked. For best results, add the broccoli last to preserve its green color. Season with salt, pepper, oregano, and chili flakes for a simple and healthy dish that is quick to prepare. Feel free to share your own version of this recipe - I'd love to try it out! 😀❤
