I love making tea. Whenever I am tense, it is very relaxing. Actually focusing on the whole process.
But then I love cooking. As i m a vegetarian so it is veg or vegan. favorite cusines are Kashmiri . Authantic kashmiri dishes are cooked without onion, harluc or tomatoes. The reason might be that these were not available in older days . It is cold and wintery and roads were not accessible almost half of the year. Only the dry powdered ingredients are used. The medium of cooking is mustard oil. Itz is a slow cooking process and the outcome is great.
Then I live Dogri (Jammu) cuisine. Ahain no onion or garlic. Very simple to cook but great taste.
Himachal has so many different varities, depending on the region and the people. Himachali DHAM is very famous. Won't go into details, as it is a vast subject. It is simple ,yet delicious and healthy too.
I love to spend time in the kitchen. It is one of my happy place, other being the beach. Both are relaxing and help me get my writing ideas.
